Each year, as late summer unfolds, our team embarks on a cherished tradition, foraging wild damson plums from the secluded lanes and hedgerows.
These small, deep blue-purple fruits, with their firm texture and distinctive tartness, are a rare find, ripening briefly in February and March. Their fleeting season and unique flavour make them a prized ingredient, reflecting the very spirit of Tasmania's rugged landscape.
Once gathered, the damsons are gently steeped in our Classic Gin, allowing time to meld their complex flavours. The result is a gin that balances the damson's natural tartness with the gin's botanical backbone, creating a harmonious blend that's elegant, Port-like depth, refined, layered, and unmistakably hand-crafted.
Enjoy it straight, over ice, or with a splash of soda. For a refreshing twist, mix it with ginger beer and a squeeze of lime. This is a gin that speaks of place, season, and the quiet reward of patience.
