12 YEAR OLD FRENCH OAK WHISKY - SOLD OUT

Our Fresh Oak 10-Year-Old is officially sold out, and in record time!

This limited release has flown off the shelves faster than any whisky we’ve released before. A true testament to the craftsmanship behind the spirit and the loyalty of our McHenry community.

Thank you to everyone who secured a bottle, and to those who missed out, keep an eye out for what’s next. Something special is always just around the corner.

UPCOMING EVENTS - TASMANIAN WHISKY WEEK

Join us for an intimate night of whisky, fire-cooked food, and stargazing. Taste whiskies from McHenry Distillery, Derwent Distillery, and Dunalley Bay Distillery served by the distillers themselves and paired with a slow-cooked dinner by local chef Molly Foster

RECIPE -  Oysters with Gin, Lime and Chilli

PREP TIME: 10 MINUTES     |     SERVES: 4

INGREDIENTS:

  • 1 TBSP LIME JUICE
  • 1 TSP LIME ZEST
  • 60 ML MCHENRY CLASSIC DRY GIN (CHILLED)
  • ½ TSP FRESHLY GRATED GINGER
  • 1 TSP MIRIN
  • 1 TSP CASTER SUGAR
  • ½ RED CHILLI, FINELY DICED
  • 24 FRESH OYSTERS

METHOD:

  • IN A SMALL BOWL, WHISK TOGETHER THE LIME JUICE, LIME ZEST, GIN, GINGER, MIRIN, SUGAR AND CHILLI UNTIL WELL COMBINED.
  • SPOON THE MIXTURE OVER FRESHLY SHUCKED OYSTERS JUST BEFORE SERVING.
